Farm to table comes to fore with partnering of Milton sheep farm, Rochester eatery

SPRINGFIELD, Mass. - A Milton sheep farm and a Rochester restaurant teamed up to bring the savory taste of local lamb to hundreds of fairgoers at the Big E over the weekend.

Smiling Sheep Farm of Milton was recognized as the featured farm during the exposition's New Hampshire Day lamb tasting.

Farm owners Hilary and Wes Chapin brought in a chef from Revolution Taproom and Grill, of Rochester, to bring their finest cuts for sampling for fairgoers throughout the day on Friday.

Chef Dale Raymond and his wife, Nicole, prepared Tandoori Lamb Meatballs, a reimagined take on the restaurant's dinner, "Tandoori Lamb Meatloaf." It was the first time the couple had ever been to the fair, and both were excited to be a part of the action, according to a press release from the Big E.

The farm specializes in breeding Romney sheep for fleece, breeding stock and meat products.

Revolution Restaurant owner Mark Marchionni said today that the synergy between Smiling Sheep Farm and Revolution presented a perfect pairing as several seasonal lamb dishes appear on the Revolution's menu throughout the year.

"We were looking for a local lamb producer and so when we met it was kismet, we were more than happy to help out," Marchionni said. "Anytime you can get something fresh and local it just works."

The Tandori Lamb Meatloaf will be on the Revolution's menu for a few more weeks, he said.

The Big E, also known as The Eastern States Exposition, is billed as New England's Great State Fair. It is the largest agricultural event on the Eastern Seaboard and the seventh-largest fair in the nation.

Revolution Taproom and Grill has won multiple awards in its short time in Rochester, including The New Hampshire Magazine's Best of New Hampshire 2015 and TripAdvisor's 2016 Certificate of Excellence.
