The whole thing was kinda cheesy ... just the way we like it

ROCHESTER - Among the food trucks that attended the Revival Day of Hope at the Common on Saturday was one we'd never seen before: Cheese Louise, which is solely dedicated to the crafting of that most decadent yet simplistic of all comfort foods; the venerable grilled cheese.

And let me say right off the bat I was very, very comfortable scarfing down this perfectly grilled gastronomic goodie.

The menu is very exclusive: only grilled cheese allowed.

I chose "The No Porkin' Way," which featured pulled bbq, sweet potato, caramelized onions, slaw and cabot cheddar on gluten free bread.

It was as filling a grilled cheese as I'd ever had, with myriad of tastes complimenting each other as one.

I especially enjoyed the tartness of the cole slaw addition, which brought some acidity to the sweetness of the cheddar.

All these guys do all day is grilled cheese, so it was no surprise when it came out perfectly crispy, gooey and delicious.

For $11, it was well worth it.

And it's a small thing, but the fact they throw in a few Cape-Cod style chips is worth mentioning, because you got to have some chips with a grilled cheese.

And of course it was appreciated that they had gluten free bread for those with gluten sensitivity.

The Cheese Louise food truck is out of North Conway, where they also have a fixed stand at 2 Common Court. They also have locations at 175 Kancmagus Highway and in Portland, Maine, at 363 Fore St.
