Minimum waste, maximum taste make Bucky's Skillet a Milton must see

MILTON - When you taste Bucky's beef and vegetable soup the first thing you realize is this tastes more like mom's than a restaurant's.
The hearty beef broth is chock full of onions, carrots and the miracle green kale.
Sans fillers and flours, the soup tastes like a bowl of healthy wholesomeness.

Bucky Buchanan, whom you may also know as David, graduated from Nute High in 1989. He began working soon after as a cook in restaurants before becoming an executive chef.
His career took a decisively turn when he entered the former Balsams Culinary Apprenticeship program in the late 1990s. The program was known for turning out some of the finest chefs around the world.
Now after working in the culinary trade for more than 30 years, including

owning his own restaurant in Rochester, N.Y., he's come home to Milton to open Bucky's Skillet located in the former Ray's Marina building.
The space is warm and inviting and looks out on Milton Three Ponds. Furnishings include rustic wooden tables and counters.
Buchanan is environmentally conscious. There are no straws or plastic here: just reusable silverware and quaint cloth napkins.
All of the food is served on compostable and recycled products.
Waste is kept to a bare minimum.
Bucky's Skillet is run by Bucky and his sister, Kerry Buchanan.
While we waited for our meal, my granddaughter, Rylee, 3, enjoyed playing

with a miniature Etch-a-Sketch, one of the many toys Buchanan keeps on hand for children.
Buchanan said he planned on adding space for a Lionel train set in the near future as an homage to the former Milton train station that was located just steps north of the restaurant.
He said when the New Hampshire Northcoast morning freight rolls by on its way to Ossipee you get a bit of a rumble, but it's much bigger in the afternoon when it's full. Unfortunately for train buffs, he's closed during the afternoon run.
Rylee, who had a grilled cheese topped with fried potato shavings, gave her sandwich an enthusiastic "two-thumbs up."
We do, too.
Much of their menu is naturally gluten free.

Bucky's Skillet is located in the former Ray's Marina building at 584 White Mountain Highway, Milton, NH. It is open for breakfast and lunch. They are closed Monday and Tuesday.
