ROCHESTER - Sonny's Tavern of Dover bills itself as a state of the art gastropub that specializes in handcrafted cocktails and innovative, inspired comfort food.

If all goes as planned, its sister tavern, Sonny's, will open in late May at the site of the former Mooyah restaurant at The Ridge Marketplace.

Tyler Lessard, who co-owns Sonny's Tavern with Dean Baltulonis and Amanda Gouin, said many of their favorite dishes will also be featured at the Rochester restaurant, which will be known simply as Sonny's.

"We have appetizers that folks love like brussel sprouts flash fried with honey and crushed peanuts, or biscuits with honey butter or one of our varieties of devilled eggs," he said while working on renovating the space at The Ridge earlier this month.

They also feature main entrees like Cauliflower Pappardelle, which is cauliflower steak pappardelle with house pomadoro or Beef Cachete, which is braised beef with creamy parmesan polenta and charred broccoli rabe.

Co-owner Gouin said Sonny's will be a blend of their traditional fare plus some new wrinkles.

"For the Rochester location we will offer a casual and welcoming environment with elevated comfort food and craft cocktails," said Gouin. "The menu will have a variety of options from burgers to brussels sprouts to steak frites. You can expect to see a lot of the favorites from the Dover location as well as some exciting new offerings.

Lessard said another notable feature of the gastropub will be their handcrafted designer cocktails that are "locally sourced," curated by season and served as drafts.

"We do them as as drafts, so they're consistently delicious and fast to make," he said.

He said the layout of the tavern will include a long bar with three TVs on the wall and tables along the windows with outdoor seating come the warmer weather.
